Here's what you'll need:

  • 1 pound baby Yukon Gold potatoes, scrubbed and quartered
  • A good pinch of kosher salt
  • 4 tablespoons of melted butter
  • 2 cloves of garlic, minced
  • 1 teaspoon of fresh thyme leaves
  • Freshly ground black pepper to taste
  • 1/2 cup of freshly grated Parmesan cheese

Instructions:

  • Boil the potatoes. Bring a large pot of salted water to a boil and add the potatoes. Simmer until tender, about 15 minutes. Drain and let cool slightly.

  • Smash and season the potatoes. Preheat the oven to 425 degrees Fahrenheit. Use a potato masher or the bottom of a glass or jar to smash the potatoes flat on a baking sheet. Toss the smashed potatoes with melted butter, garlic, thyme, salt, and pepper.

  • Sprinkle with Parmesan and bake. Sprinkle the smashed potatoes with Parmesan cheese and bake for 20-25 minutes, or until the bottoms of the potatoes are crispy and the Parmesan is golden brown.

Here are a few tips:

  • Use waxy potatoes, like Yukon Golds, for the best results. They crisp up nicely and have a buttery tenderness.

  • Use melted butter to coat the potatoes before baking. This will help them crisp up and give them a delicious flavor.

  • Season the potatoes with your favorite herbs and spices. We love garlic, thyme, and Parmesan, but you can experiment with whatever you have on hand.

  • Smash the potatoes flat before baking. This will help them cook evenly and get crispy on the outside.

  • Serve the potatoes plain or top them with your favorite toppings, like chili oil, bacon, cheese, and sour cream.
